Steps 1-2

Dice up the sweet potato into little cubes and add to the skillet with some coconut oil. In a separate skillet get the sausage going.

We usually add a jalapeno or another hot pepper but I didn’t have any when taking these photos.

Step 3

The sweet potato may take a little bit longer than the sausage, but when they are getting close, lower the heat to the lowest setting and add the sausage. Mix well then add the raw spinach. We usually cover it at this point and let the trapped heat cook the spinach.

Steps 4-5

Give the skillet you cooked your sausage in a quick wipe, and then increase the heat to high. Cook your eggs how you like them, but I would suggest over-medium.

Uncover the sweet potato, sausage, and spinach and mix well. Then plate it up and top it with the eggs.

Sweet Potato Sausage Skillet

Equipment

  • 1 Large Skillet Sweet potato and adding sausage to
  • 1 Medium Skillet Cooking sausage then the egg once sausage is removed

Ingredients
  

  • 4 Eggs
  • 1 med Sweet Potato
  • 1/2 lb Bob Evans Spicy Breakfast Sausage
  • 1 Jalapeno
  • 1-2 cups Spinach or Kale
  • Coconut Oil
  • Brown Sugar (optional)

Instructions
 

  • Dice sweet potato into ¼ inch cubes. Then saute in coconut oil until tender. About 7 minutes, stirring occasionally.
    Coconut Oil, 1 med Sweet Potato
  • Brown sausage in the skillet (or cook in a second skillet, drain then add)
    1/2 lb Bob Evans Spicy Breakfast Sausage
  • Toss in peppers, brown sugar, and top with raw spinach or kale. Cover until spinach is wilted.
    1 Jalapeno, Brown Sugar, 1-2 cups Spinach or Kale
  • In a separate skillet cook two eggs (recommend over medium).
    4 Eggs
  • Serve scramble on plate topped with eggs.

Best with hot sauce of course
